- 2 sheets of puff pastry
- 1 egg
- 2 tbs of mustard
- 4 sliced leeks
- 2 cloves of garlic
- 3 sprigs of thyme
- 1/2 cup of white wine
- 3/4 cup of vegetable stock
- 150g of feta
Preheat your oven to 200 degrees and prepare your pastry by brushing the side of each sheet with egg and joining them to make one big sheet. Then create a 1.5cm border around the entire sheet with egg and poke holes with a fork to let air in. Put it in the oven for 15 minutes until lightly golden.
After cooling slightly, use your hands to gently flatten the puffed centre. Take your pastry and spread the mustard over it. Bake for another 10 minutes until it is fully golden.
Next turn your stove to medium-high and heat up some oil and butter in a frying pan. Add the sliced leek, garlic and thyme and cook for 5 minutes.
Add the wine to the mixture and boil for approximately 3 minutes. Once the mixture has reduced by about half, add the stock and bring it back to the boil. Then, lower the heat and allow it to simmer for 10 minutes. When the leeks are tender, take it off the heat and let it cool slightly. Discard the thyme sprigs.
Finally, take your pastry and add the leek mixture to it, within the border. Put in your feta and add extra thyme and mint to garnish.
Just like that, your tart is ready to serve. Plate up for your family and friends and enjoy!
